  • Real Alphonso: The skin is incredibly thin and feels almost like soft parchment paper when ripe. It will have a beautiful, uniform golden-saffron hue, often with a slight blush of red near the top.
  • Fake Alphonso: The skin is usually thick and rubbery, with uneven green patches even when it feels soft.

3. The "No Fibre" Rule

This is the ultimate test once you cut it open. A true Alphonso mango is renowned globally for one reason above all else: it has absolutely zero fibre.

When you slice into it, the knife should glide through the pulp like butter. The flesh should be firm, yet melt in your mouth immediately. If you find yourself picking fibrous threads out of your teeth, you unfortunately bought a fake.
